These bladders are collected from live freshwater fish, thoroughly cleaned and flash-frozen right after harvest. Each piece is plump, thick and tender with a translucent pink tone. Excess fat, blood stains and inner membranes are removed in advance, so the fishy odour stays minimal.

Cooking Ideas

Stir-fry over high heat with ginger, garlic and chilli for a crisp bite, blanch briefly for hot pot, or simmer with ribs and corn for a rich broth. It stays crisp when cooked fast and turns silky in slow braises.

Storage & Safety

Thaw slowly in the fridge and rinse briefly before use. Avoid thawing at room temperature. Cook thoroughly before eating and do not refreeze after thawing. Not suitable for people with aquatic product allergies.
